COCONUT MILK RICE

This recipe comes from the south most part of Tamilnadu. We have so many kinds of variety rice in south india like tamarind rice, lemon rice, sesame seeds rice etc.These rice varities are allmost preferred to be spicy and they have a unique  flavour to their dish. But this coconut milk rice will have rich coconut flavour  but also tastes plain which suits all your gravy. Its a very rich rice to be served in a party and for your guests and family. You no need to get confuse, that which gravy will suits which rice if you prepared this coconut milk rice as it goes will with all kind of curries and gravies. I learned this from our family friend and I become a fan for it, hope whom ever tastes will become fan for this coconut milk rice.

Ingredients:

1. Thick coconut milk -  1 3/4 cups (freshly extracted or a ready made one)
2. Raw rice or Basmati rice - 1  cup
3. Water - 1/4 cup
4. Green chillies - 1


Seasoning:

1. Cloves - 1
2. Cinnamon stic - 1 small piece
3. Ghee (clarified butter) - for cooking
4. Cashews - 1 tbs ( optional)

Method:

1. Heat Ghee in a pressure cooker or in a pressure pan. 

2. Add Green chillies, cloves, cinamon stic and cashews if you are adding.

3. Add coconut milk and the water according to the measurement given. Add salt to it.

4. In the mean while, clean and wash the rice and keep it ready to add.

5. Once the coconut milk starts to boil, add the washed rice to the coconut milk and close the lid. Pressure cook it. Give 2 whistles on your pressure cooker.

6. Once the pressure is released remove the weight from the cooker and  trasfer the cooked rice to a serving bowl.

7. Serve it hot with any preferred gravy.
