RIDGE GOURD SKIN CHUTNEY


This is a fibre rich chutney, which is in practice for so many generations in southern india. Still some people might not be aware of this .  So lets everyone enjoy this  healthy recipe!


Ingredients:

1.  Ridge gourd skin - from 2 big size ridge gourds
2.  Urud dhal - 1 tbs
3. Channa dhal = 2 tbs
4. Red chillies - 4
5. Freshly grated Coconut - 2 tbs
6. Tamarind -  a small portion just for the tangy taste.

Seasoning:

1. Mustard seeds - 1 tsp
2. Urud dhal - 1 tsp
3. Curry leaves - 4-5

Method:

1.  Chop the ridge gourd skin into small, even size. 

2. Add 2 tbs of oil in the pan.  Add urud dhal, channa dhan, red chillies, tamarind and the chopped skin to pan. For for 5-6 minutes. Finally add the grated coconut to the pan and mix together.

3. Once the fried items gets cool, grind it to a fine paste in a mixer or a blender.

4. Heat oil in a pan, once the oil gets heated add mustard seeds, urud dhal and and curry leaves for seasoning.

5. Serve with hot white rice or with idly & dosa.

variation :-  You can add 2 garlic to this  while frying other ingredients. And you can do this without adding coconut also.
