TOMATO SOUP

Tomato soup is one of the all time favorite to all, which you can prepare easily with the ingredients mostly avaiblable in our house in few minutes. Its a good appetizer and a good starter before having a meal or a dinner. The colour itself will tempt people to have more and who's going to wait taking it....

Ingredients :

1. Tomato - 3 medium size
2. Carrot - 1 big size
3. Ginger - 1 inch
4. Garlic - 3 cloves
5. Bay leaf - 1
6. Cloves - 2
7. Green chillies - 1
8. Pepper  corns - 2 or 3
9. Salt - as requried
10. Onion - 1 medium size
11. Butter - 1/2 tbs (optional)
12. Cream - 1 tbs ( optinal)
13. Coriander leaves - few for decorating

Method:

1. Cut the tomatoes into four pieces, remove the skin from the carrot and chop into bigger pieces.

2. Take a pressure cooker, add 1/2 cup of water to the vessel. Add chopped tomatoes, carrot,  green chillies, onion, ginger, garlic, bay leaf, clove, green chillies, pepper corns, salt and close the lid. Give 2 - 3 whisltes or cook for 10 minutes.

3. Once the pressure is released from the cooker, filter the water or stock in a colander and keep it seperately. Remove green chillies, bay leaf, cloves and pepper corns from the residue.

4. Once the other ingredients comes to room temperature blend it to a fine paste. Mix it with the stock you have allready preserved. If you want you can add the required amount of water, depends how you want the consistency. Boil it for 4-5 minutes. If you want a thin soup, you can add more water and if you want a creamy  tomato soup, you can add boiled milk at room temperature or even you can add cream for creamy tomato soup.

5. Add butter and cream on top the soup for extra richness, before serving and sprinkle chopped coriander leaves as a optional.

6. Serve hot with garlic bread or fried bread croutons. The combination will be amazing and everyone will love it.
