CHETTINADU VELLAI APPAM ( DEEP FRIED WHITE PATTIES)

Chettinadu, is famous for its non-veg recipes. This one of the popular vegetarian dish, which we cannot get it often in restaurants. This is a yummy, yummy snack served with tomato chutney.

Ingredients:

1. Raw rice - 1 cup
2. Urud dhal (skin removed) - 1/4 cup
3. Regular milk - 2 tbs
4. Salt - as required
5. Baking soda - 1 pinch ( optional)
6. Oil - for deep frying

Method:

1. Soak raw rice and urud dhal for a minimun for 3 hours. Grind the soaked raw rice and urud dhal to a fine batter by adding enough water. The consistency should be like a dosa batter consistency.

2. Mix milk, salt and baking soda (if you are using). Mix it well with the batter. You can use the batter immediately, no need for fermentation.

3. Heat oil for deep frying in a pan, take the batter in a laddle and pour slowly on the the hot oil. It will automatically spread it to circular patty in the oil. Allow to cook for 30 seconds, flip it to the other side. Once it get cooked, transfer to a tissue paper to absorb extra oil. The patties should be taken out in white colour itself and not to be taken very crispy.

4. Serve hot with tomato chutney.
