Generally reshmi kebab are done with meat or chicken for its juicy texture. Here is the recipe of reshmi kebab for vegetarians and also a nice paneer treat. Its a nice party starter, evening snacks and a tasty treat for your guest also.
Ingredients:
1. Grated or crumbled fresh paneer - 1/2 cup
2. Potato - 1 Big size, boiled and smashed
3. Fried gram powder - 1/4 cup
4. Salt - as required
5. Ginger, garlic, green chilli paste - 1 tbs or as required
6. Garam masala powder - 1 tsp (optional)
7. Oil - for shallow fry
8. Coriander leaves - chopped
9. Cashews pieces - 1 tbs, crushed (optional)
Method:
1. Boil potato and smash it well without any lumps, keep it in seperate bowl.
2. Put fried gram ( chutney dhal) to a blender and grind it to a fine powder and keep it in a seperate bowl.
3. Grind ginger, garlic and green chilli to a fine paste with few drops of water.
4. Take a big bowl, mix crumbled paneer, smashed potato, fried gram powder, ginger - garlic & green chilli paste, cashew pieces, chopped corinader leaves and salt to a dough consistency. Mix water in very lesser quantity to blend all the ingredients together.
5. Make all the panner mixture into small balls and flat it into patties and keep it ready in a plate.
6. Heat oil in a pan for shallow fry, allow to fry golden brown on both the sides.
7. Serve hot with mint chutney or sweet chutney.
