The great combination for idly and dosa is the idly-milagai podi. The mixture of the oil and milagai podi is a tempting combination. This is a nice combination for idly, while packing idly for out of station. There are various combination of preparing this podi at different parts of the of tamilnadu. The following recipe have the combination of all the flavor, so you taste it and enjoy the flavour.
Ingredients:
1. Channa dhal - 1/2 cup
2. Urud dhal - 1/4 cup
3. Dhania / coriander seeds - 1/4 cup
4. Sesame seeds - 1 tbs
5. Red chillies - 1 1/2 cup
6. Asfotedia powder - 2 tsp
7. jeera - 1/2 tsp
Method:
1. Dry roast all the above ingredients one by one in a hot pan to golden brown and grind it to a coarse powder and allow to cool. Store it a airtight container and it will be good for more than 6 months. You can take the required amount of powder for serving with idly, mixed with gingelly oil. You can also sprinkly this powder on top of dosa and oothappam.
note: don't let the ingredients to get black while frying.
