CAPSICUM RICE

This is a healthy and simple rice which goes quick to the lunch box in the morning times. This recipe outcame when some spices where not availble, but it become often in our home in variety- rice list as it is simple and healthy.

Ingredients:

1. Capscicum - 1 big size chopped length wise.
2. Onion - 1 (chopped length wise)
3. Sambhar powder - 1 spoon ( as required)
4. Lemon juice - 1 spoon
5. Cooked rice - 1 cup
6. Salt - as required
7. Turmeric powder - 1 tsp

Seasoning:

1. Mustard seeds - 1 tsp
2. Jeera - 1 tsp
3. Curry leaves - as requried

Method:

1. Heat oil in a pan, add mustard seeds, jeera and curry leaves.

2. Add chopped onions to the pan, fry slightly. Add chopped capsicums immediately fry until it gets cooked well without adding any water.

3. Once it gets cooked add turmeric powder, salt, sambhar powder and fry until the raw smell goes from the sambhar powder.

4. Add  cooked rice and lemon juice to the pan. Mix together until it blends well.

5. Serve hot with onion, tomato mixed raita or with chips.

note: the rice should be cooked before and allow to room temperature before serving. The consisency of the rice should not be sticky.
