This is a tummy filling and easy to take away food. This is generally served as a breakfast, but still i feel its good to have at the evening also. The preperation time is less is for this recipe, so you can enjoy your evening by having a fast food at home.
Ingredients:
1. Eggs - 6
2. Onions - 1 big size ( chopped)
3. Mushrooms - 100 gms ( chopped)
4. Spinach - 1/4 bunch ( or as much you required, lesser quantity is enough)
5. Tomato - 1 chopped ( deseeded)
6. Chedder cheese or mozarella cheese - shredded, to sprinkle on top ( optional)
7. Butter - 1 tbs ( you can use any cooking oil also)
8. Salt - as required
9. Pepper - as required
10. Milk / cream - 1/2 cup
Method:
1. Heat a skillet, add 1 tbs of butter, add chopped onions, mushrooms, spinach and deseeded tomatoes. Give a gentle fry for 4-5 minutes.
2. In the mean while, beat 6 eggs in a bowl and beat until it becomes frothy. Add salt and pepper to the beaten eggs. Add milk to the mixture and mix it nicely.
3. Once the vegetable are fried for 4-5 minutes, add the egg mixture to the skillet. Keep the stove in a very low heat. Leave the mixture undisturbed for 1 minute. Give a gentle stir to the mixture, so that it will give layers. Reapeat the same process for one more time after 30 seconds. Don't allow the eggs to get settled. Transfer the egg and vegetable mixture to a greased casserole and bake it in a preheated oven for 35 - 40 minutes at 190 d C.
4. You can sprinkle cheese immediately after removing the dish from the oven. Make it into slices of desired shapes and serve it hot with sour cream or tomato ketchup.
