Chayote is a very common vegetable which we can get all over the season. It is a vegetable with more water content used very commonly in Indian cookings with dhal or in curry etc. But using the chayote in chutney form is very uncommon and I learned it from my mother-in -law. This vegetable don't have any peculiar taste, so its easy for flavoring to the taste we required. If you serve this chutney without mentioning the ingredients, I bet its very hard to guess out..
Ingredients :
1. Chayote squash - 1 big size ( chopped into smaller pieces)
2. Green chillies - 3 ( as required)
3. Channa dhal - 1 tbs
4. Tamarind - a small piece just for tangyness
5. Salt - as required
Season:
1. Mustard seeds - 1 tsp
2. urud dhal - 1 tsp
3. curry leaves - 4-5
Method:
1. Heat 1 tbs of oil in a pan, add channa dhal, green chillies and chopped chayote squash. Keep on frying until the raw smell goes. Add 1/4 cup of water finally to get cooked well.
2. Once the water evaporates completely, add salt, tamarind to the pan and switch off the stove.
3. Once all the ingredients gets to room temperature, grind to a fine paste with a blender. Transfer to a serving bowl.
4. Heat Oil in another pan, add oil of seasoning. Once the oil gets heated add mustard seeds, urud dhal and curry leaves and pour on top of the chutney.
5. It goes well with hot idly and dosa.
note :
1. My friend made a little bit variation to this recipe and told it too came out well. She added grated coconut to this recipe. So you try both the versions.
