TOMATO RICE VARIATION 2

This tomato rice recipe will make everyone to ask about the ingredients you have added, because its tough to find out. Ofcourse, its a very simple tomato rice which I served in a getogether and everyone was pleased about the taste.

Ingredients:

1. Tomato - 2 big size
2. Onion - 1
3. Sambhar powder - 2tbs or less/more as required
4. Salt - as required
5. Turmeric powder - 1 tsp
6.White channa - soaked over night or a min of 5 hours soaking
7. Raw rice or basmati rice - 1 1/4 cup
8. Water - 2 cups
9. Oil - for cooking

Seasoning:

1. Mustard seeds - 1 tsp
2. Jeera - 1 tsp
3. Curry leaves - 1 twig

Method:

1. Here I am mentioning 3 litres pressure cooker to cook directly on the vessel. Heat oil in a vessel, add mustard seeds, jeera and curry leaves. Once they popped and fried add sliced onions and fry until golden brown.

2. Add chopped tomatoes, fry until soft. Add salt, turmeric powder, sambhar powder and fry until the raw smell goes.

3. Drain the water from the channa and add to the vessel and mix together. Add 2 cups of water to the vessel and allow to boil.

4. Once the water started to boil, add the washed rice to the vessel and pressure cook until it gives 1 whistle. Switch off. Remove the lid of the pressure cooker, once the pressure is gone.

5. Transfer to  a serving bowl, serve hot with any raita, chips or pappad.

Note : if you wish you can serve it with few drops of ghee on top of the rice and sprinkle coriander leaves.
