TOMATO RICE WITH VARIATION - 1

Tomato rice is one of the common variety rice we use to do in our houses, especially for the lunch boxes. Here is the recipe with little variations, which you can present your tomato rice in a get together or in a function and both the variations are single pot cooking.


Ingredients:

1. Tomato - 2 big size
2. Onion - 1 (finley sliced)
3. Ginger garlic paste - 1 1/2 tsp
4. Green peas - 1/4 cup (optional)
5. Turmeric powder - 1 tsp
6. Red chilli powder - according to your taste
7. Salt - according to your taste
8. Basmathi rice - 1 1/4 cup
9. water - 2 cups ( for cooking rice)

Seasoning:

1. Jeera - 1 tsp
2. Cloves - 2
3. Cinamon - a small piece
4. Bay leaf - 1
5. Cashews - few ( if you want to present your dish rich)
6. Raisins - few ( if you want to present your dish rich)
7. Coriander leaves - finely chopped ( to add finely)

Method:

1. Here I am using a 3 litres pressure cooker for cooking directly.  You can use you own choice as you use to cook other variety rice.

2. Heat oil  in a vessel, add jeera, cloves, cinamon stic and bay leaf.  Once they got fried, add thinly sliced onions and fry until they turn golden brown.

3. Add Chopped tomatoes to the vessel and cook until they become soft. Add ginger garlic paste and fry for 30 seconds. Add red chilli powder, turmeric powder and salt. Add green peas and fry for 1 more minute. 

4. Add 2 cups of water to the vessel allow to boil. In the mean while, clean and wash the rice and keep it ready. Once the water started to boil, add the washed rice and close the pressure cooker and put the cooker weight and give just 1 whistle.

5. Once the pressure is released, add the chopped coriander and cashews and raisins fried to golden brown in the butter/ ghee.  Mix together and transfer to a serving bowl.

6. Serve hot with any kind of raita.

Note : - By adding a spoon of lemon juice finally, will enhance the flavor and rice.
