ANDHRA BEERAKAYA POTTU KARAM ( SPICY RIDGE GOURD POWDER)



This  recipe will be the favorite for almost everyone especially for hot and spicy lovers. The powder prepared from ridge gourd skin in the following way can be stored for a month or more if you store it in refregirator and you can serve with white rice, idly,channa dhal idly, dosa and almost with everything.  Once you tried it, you will never let to throw ridge gourd skins to the bins.

Ingredients:

1. Ridge gourd skin - peeled from 4 ridge gourds
2. Red chillies - 10- 15
3. Garlic cloves - 6
4. Salt - as required

Seasoning:

1. Mustard seeds - 1 tsp
2. Jeera - 1 tsp
3. Oil - 1/2 cup

Method:

1. Chop the peeled skin from the ridge gourd to smaller pieces.

2. Add the  chopped raw skin, peeled garlic, red chillies, salt to the mixer and grind it togther with  2 spoons of water finely.

3. Heat 3 tbs oil in a pan, once it gets heated add mustard seeds, jeera. Once it gets roasted add the grind mixture to pan and fry nicely. Dont add the full quantity of oil at a time. Add oil to the pan slowly at different stages or whenever you feel its getting sticky and you could not fry.

4. Once you get the cosistency of granuales and completely dry, you can remove from the pan. Store it in a air tight container, when it gets completely cool.

5. The procedure is very simple but it takes about 15-20 minutes to cook.
