CORIANDER CHUTNEY 1

While making chutney with coriander, it looses its important vitamins while frying it on a hot pan. Try this recipe, where you will recive the full vitamins from the coriander.

Ingredients:

1. Fresh coriander - 1/2 bunch
2. Green chillies - 3
3. Curd - according the liquid consistency
4. Coconut grated - 1/4 cup
5.  salt - as required.

Seasoning:

1. Mustard seeds - 1 tsp
2. Jeera - 1 tsp
3. Urdu dhal - 1/2 tsp
4. curry leaves - 4-5
5. Oil - as required

Method:

1. Clean the coriander leaves in the running water without any dirt. Trim off the thick stems from the end.

2. Chop the coriander into pieces. Add chopped coriander, grated coconut, green chillies and salt in a blender and grind it into fine paste with the yogurt. Use yogurt, instead of water to grind. If the yogurt have more sourness, you can add little water.

3. Add yogurt little by little, otherwise the consistency of the chutney will become watery.

4. Heat oil in a pan, add the seasonings and pour it into the chutney bowl.

5. Serve with hot idly and crispy dosa. And also it can be served with white rice.
